Weekly Recipe – Strawberry Granita

     So far we’ve covered just about every aspect of a meal: the entree, a drink and a side dish. This week I’m going to focus on a dessert. This is one that I’ve had a couple times. It helps me to have something sweet at the end of the meal without derailing all I’ve done.

Strawberry Granita
2 pints fresh strawberries (hulled)
1/2 cup water
1/4 cup molasses
2 tbsp lemon juice

1. In a large blender, blend all the ingredients together
2. Pour into a freezer-safe container and freeze for an hour or so
3. Then, with a fork, scrape the frozen parts at the edge of the container into the middle and remix.
4. Freeze again for another 3 hours or overnight
5. Take out of the freezer 10 – 15 minutes before serving to all it to soften

This is a pretty short and sweet recipe. There’s not a lot to it, but its got big flavor. The only thing I can tell you is to be careful with the molasses. The amount really depends on your strawberries so the best advice I can offer with this recipe is to play with your food. try it out until you get the amounts just right, no 2 batches will be the same.
